Noodles were supposed to be tasty on their own with very little needed to make them superb. They were supposed to soak up the juices and flavours of whatever surrounded them and were supposed to make you feel warm and cosy, or nice and cool like cold soba and somen in Japan.
They were not supposed to take like some gluggy kind of glue or so chewy that it reminded you of overlooked squid. They were not supposed to be so bland and boring that you felt dissatisfied at the end of your meal.
Hence why I hated udon.
